Beyond Metabolism: The Biology and Chemistry of Carbohydrates

Carbohydrates are important in many biological processes. In addition to affecting human metabolism, complex chains of carbohydrates coat cellular surfaces and affect many biological processes, including molecular recognition, cellular signaling, and host-microbe interactions. In this workshop, we will highlight carbohydrate structure and how structure relates to biological function. We will demonstrate and discuss classroom activities that can be used to teach molecular structure, enzymes and catalysis, and data analysis and interpretation.
